- 2 eggs
- 1 medium tomato
- 1 small green pepper
- 1 avocado
- 1/2 pre-cooked chicken breast (chicken breast was baked with chile powder, paprika, a dash of chipolte)
- Small handful fresh cilantro
- Optional: salsa or hot sauce
Fill the omelette with half of the chopped ingredients and fold in half. Once cooked, top with the rest of the vegetables and add salsa or hot sauce!
Traditionally considered a breakfast food, healthy omelettes are a great and filling meal any time of day.
