Recipe: Mexican Omelette

I love omelettes, they are a great way to pack as many vegetables as possible into your meal. We eat a lot of Mexican food as most dishes typically use a lot fresh vegetables, protein and a variety of healthy spices.
  • 2 eggs
  • 1 medium tomato
  • 1 small green pepper
  • 1 avocado
  • 1/2 pre-cooked chicken breast (chicken breast was baked with chile powder, paprika, a dash of chipolte)
  • Small handful fresh cilantro
  • Optional: salsa or hot sauce
Chop the vegetables and chicken, then heat a pan to medium. Add a little bit of coconut oil to coat the pan, mix two eggs and pour in the pan. Lightly cook each side of the omelette.

Fill the omelette with half of the chopped ingredients and fold in half. Once cooked, top with the rest of the vegetables and add salsa or hot sauce!

Traditionally considered a breakfast food, healthy omelettes are a great and filling meal any time of day.
